The Fat Duck Cookbook by Heston Blumenthal is a cookbook for a small minority of customers. You must have an interest in molecular gastronomy methods. You must have a budget that allows you to eat at expensive restaurants. You must like odd people that don't conform to all the norms of society.

The Fat Duck Cookbook reviewers have pointed out the recipes are extremely complicated. A lot of details are given, but you should be prepared to shell out a couple of thousands of dollars on (used) equipment before you can get started. The book has some pictures of the dishes, but could do with more descriptive pictures.

However, this is just not a glossy book to boost the ego of its
The Fat Duck Cookbook author. I find the discussion around taste, chemistry and visuals relating to each recipe very interesting. You really get a look into Heston's thought process. I don't think Heston has used a ghost writer. I would imagine this can inspire both professional chefs as well as amateur cooks, if so inclined. One place to start experimenting might be with the whisky gums, which don't require any expensive equipment.

Professional Baking 5th Edition, Wayne Gisslen PDF Free Download ebook



Whenever I need to look something up, be it a recipe or some background information about baking bread/pastry, Professional Baking 5th Edition by Wayne Gisslen is the book I usually reach for, the information and tips provided are clear, concise and it's well illustrated.

In order to avoid disappointment potential buyers should know that the
Professional Baking 5th Edition book is intended as a textbook for people wishing to become professional bakers/serious amateur bakers and although there are hundred of recipes, the emphasis is clearly on technique and product makeup.

Many of the recipes also deal with quantities that are quite large for the average amateur pastry chef so you'll have to adapt them to to the yield you're aiming for. I have to add that yields, ingredient lists and quantities are very clearly given with each recipe. A big plus -for me- is that measurements are metric and by weight. No 'cups' that are inherently inaccurate when dealing with ingredients like flour and should be avoided anyway.

In short, if you're serious about learning how to bake, be it breads or pastry,
Professional Baking 5th Edition is a work that should be on your bookshelf and I'm sure it will prove to be extremely helpful!

Modern Batch Cookery Download PDF ebook



Even though I've only made 2 recipes from this Modern Batch Cookery by The Culinary Institute of America book, I've actually made some of these same recipes from the Pro Chef 8th edition. There are several identical recipes from the Pro Chef in here, only scaled up for 50. I have no problem myself with the duplication of these recipes, as a lot of people probably wouldn't buy both of these books. The ones I've made from this book are the 'Roasted Peppers and Goat Cheese Canapes', and the 'Chocolate Mousse.' Both turned out nicely and were well received.

The first
Modern Batch Cookery 4 chapters are principles and guidelines for large quantity cooking. I found it interesting, but much of this information is in the Pro Chef also. There is also a lot of the theory of cooking and food costing, so if you're not interested in that, you might want to skim those sections. There is also a section on food safety, and it is fairly recent because it uses 41 and 135 degrees as the cool and hot temperatures. If you're at all familiar with food safety, you know what those are already, but it doesn't hurt to remind us. If you don't know those things, then get the latest Servsafe manual, as food safety is important, even at home.

Next come the
Modern Batch Cookery recipes, and they're arranged in the usual manner. Stocks, soup, and sauces then breakfast and brunch items salads, apps and sandwiches entees side dishes, desserts and last but not least, a chapter on reception foods.

Eleven Madison Park Cookbook PDF Review Download



This Eleven Madison Park Cookbook by Daniel Humm, Will Guidara, Francesco Tonelli  is actually the first review I have ever written here. I have a literal library of cook books and baking books. I just found this book so inspiring, that I wanted to share my new found love for it. I bought this book not really knowing what I was going to get, but I am so glad I ended up buying it.

All the photography is so stunning and the plating is just artful. However, Eleven Madison Park Cookbook  is not a cook book for the average "Joe." Each dish has a multiple of components that go on each plate and some have components that have to be made in order to use it as an ingredient for another part of the dish.

I love that the Eleven Madison Park Cookbook book is separated by season, and each season has a recipe progression makes you feel like you are sitting down, eating a meal at Eleven Madison Park. That is, you start with recipes from appetizers, entrees, then desserts. Bottom line, if you have some cooking experience, the patience, time, and money (as many of the ingredients are very luxurious), these recipes can definitely done by the home cook. However, if you lack the skills, I would still get the book if only to see the amazing food they make, and mostly to give you inspiration in your own cooking adventure.

Cuisine and Culture a History of Food and People 3rd Edition PDF Download ebook



We have been using Tannahill's text for our Food History course that is until Cuisine and Culture a History of Food and People 3rd Edition by Linda Civitello was published. While Tannahill provides a deeply detailed timeline, with links to historical events, and is quite a scholarly tome, convincing our students to actually read the book has been an uphill battle. Cuisine and Culture changed all that.

Cuisine and Culture a History of Food and People 3rd Edition book belies Civitello's true passion for food, delights our students, and serves as the perfect complement to our World Civilization course. It is full of fascinating side-notes, dispels many urban legends (the recipe for Coca Cola is not a secret; it can be found on page 209), and provides historically accurate recipes that our students then make and bring into class. I especially like the time she spends on the 20th century, and her conjectures on the future of food. Probably not the right book for one pursuing a PhD in food history, but definitely for anyone who loves food!

What I most love about this Cuisine and Culture a History of Food and People 3rd Edition book is the wonderfully witty tone in which it is written. I found myself chuckling throughout. It encapusulates history very well making me excited to read more. Civetello has a fresh style and brings exciting new research to the table so that even well schooled chefs will be surprised. Linda's book is proof that the beauty of the food profession is that there is alwyas something new to learn! Great reference list!
