Working the Plate: The Art of Food Presentation by Christopher Styler, David Lazarus is a very nice book for beginners or a cook looking to become more of a chef. The recipes are workable. There are certain patterns that repeat (e.g. use of molds, sauces, etc). Knife skills are assumed. Layering and building are touched on. Keep a plate clean, no messy garnishes along the rims. This book will firm up what you don't know, but if you are working chef this won't/shouldn't be new.

However, presentation at the next step is found in many places: Art Culinaire magazine is a start. Then the
Working the Plate: The Art of Food Presentation books of El Bulli, Michel Bras, Heston Blumenthal, Food Network, then HSN, QVC food presentations. Inspiration and cutting edge are found in nontraditional places and brought mainstream.

Working the Plate: The Art of Food Presentation book has opened my eyes on some great ideals and will help me through some plating issues while I am in school and for many plates to come. Plus my family really enjoys the fancy plating instead of the normal drop your food in the plate and go. Recommend this book to any culinary student or individual who just wants to dress up thier plates for dinner or any meal for that matter.

The small portion sizes require at least 4 or 5 dishes to comprise an entire meal (although the recipes may be scaled up to more typical serving sizes without much problem).

The French Laundry Cookbook book can be pretentious (witness the blurb entitled 'the importance of offal'), includes recipes that 99.9% of readers will not bother to attempt (stuffed pigs heads, for example) and more than a few recipes require a very well equipped kitchen to pull off (juicers, mandolines, silipat baking sheets, variety of strainers, etc...), but all seem accessible if you take your time and have mastered some basic cooking skills.

The French Laundry Cookbook very fun and informative book for those who love to cook and enjoy a challenge in the kitchen. If you are serious, you will have a blast, learn a lot, and eat some spectacular food. If the food tastes this good when I make it, I can only imagine how good it is at the restaurant.

The Fat Duck Cookbook by Heston Blumenthal is a cookbook for a small minority of customers. You must have an interest in molecular gastronomy methods. You must have a budget that allows you to eat at expensive restaurants. You must like odd people that don't conform to all the norms of society.

The Fat Duck Cookbook reviewers have pointed out the recipes are extremely complicated. A lot of details are given, but you should be prepared to shell out a couple of thousands of dollars on (used) equipment before you can get started. The book has some pictures of the dishes, but could do with more descriptive pictures.

However, this is just not a glossy book to boost the ego of its
The Fat Duck Cookbook author. I find the discussion around taste, chemistry and visuals relating to each recipe very interesting. You really get a look into Heston's thought process. I don't think Heston has used a ghost writer. I would imagine this can inspire both professional chefs as well as amateur cooks, if so inclined. One place to start experimenting might be with the whisky gums, which don't require any expensive equipment.

Whenever I need to look something up, be it a recipe or some background information about baking bread/pastry, Professional Baking 5th Edition by Wayne Gisslen is the book I usually reach for, the information and tips provided are clear, concise and it's well illustrated.

In order to avoid disappointment potential buyers should know that the
Professional Baking 5th Edition book is intended as a textbook for people wishing to become professional bakers/serious amateur bakers and although there are hundred of recipes, the emphasis is clearly on technique and product makeup.

Many of the recipes also deal with quantities that are quite large for the average amateur pastry chef so you'll have to adapt them to to the yield you're aiming for. I have to add that yields, ingredient lists and quantities are very clearly given with each recipe. A big plus -for me- is that measurements are metric and by weight. No 'cups' that are inherently inaccurate when dealing with ingredients like flour and should be avoided anyway.

In short, if you're serious about learning how to bake, be it breads or pastry,
Professional Baking 5th Edition is a work that should be on your bookshelf and I'm sure it will prove to be extremely helpful!
